You can use whatever one you want with whatever fov, so if you like your origins really close to the screen, you can use the 70 FOV VPK with 54 actual fov in-game. The 54 fov VPK features the origins far away from the screen, while the 70 fov VPK features the origins close to the screen, to keep consistency between between the two fovs. This in no way gives you any disadvantages or advantages.
